Lazy nutritious #mealprep – broccoli, cauliflower & carrots chopped small in the food processor mixed with ready-cooked whole grain rice (I buy @tildarice which is labelled gluten free). Cold for me with salad dressing, leaves & nuts; steamed in the microwave later for A with some salmon and a stir-in sauce. I see a lot of snobbery on social media about ‘processed’ or packaged food, there’s really no need for it – things like this rice have been really helpful with a newborn in the house; and the microwave can actually preserve more nutrients in veg than boiling or steaming.
