What are you challenges when faced with healthy eating? Time most definitely is mine (and I’m sure many of you will feel the same). Recently I’ve been asked about how I manage and specifically about meal prep. I usually set some time aside on a Sunday to do this, and this is what I’ve knocked up today, which hopefully should last me the next few days. I then just box them up (in fact most are going into cook in @pyrexukofficial roasting glass dishes which come with lids so they can go straight in the fridge and I can see exactly what I’ve got 🙌).

So going clockwise from the top left – I’m roasting heritage carrots – I love all the fabulous colours – lots of lutein (= responsible for the amazing colours + lots of goodness) here 🙌. I’ve also got some peppers sitting underneath some courgettes. I love using underrated and underused British veg – we have some amazing seasonal vegetables and this is one of them – turnips! I’ve just thrown in a bit of olive oil and some thyme. Moving on to some hasselback purple sweet potato 🍠- check out that colour 💜, some white onion and a whole garlic bulb flavoured with some rosemary from my garden. And finally some glorious mini multicoloured beetroot. How amazing is this sight??? I can’t wait to use all of this!!! If I have time, I marinate meat/fish/tofu/paneer, and I also try and make something like hummus, falafel, bean or lentil burgers, which I often freeze.
